Remedial Baking?

Wow, people are reading this, that's fun. Honestly though, who thought I would actually be able to post on a regular basis, that would just ruin my track record for correspondence. ;) So to all the silent readers, hi hi and thanks for coming. A big "Hi there!" to Grandma :)

There is a seemingly simple act that I really struggle with, baking! Every time I begin I think to myself, "This time I am going to read the recipe really close and make sure I follow it exactly." However, this always seems to go wrong. Sometimes I add the wrong ingredient, put mostly it's the measuring part. Today I had to make Scotcheroos (minus the scotch) for hubby's department picnic. First of all, silly husband for trusting me to make a dessert other people (his boss) are going to eat. We'll call that, Mistake #1

I went to the store got all the ingredients, and yes I remembered all of them in one trip. I even bought organic rice crispies. Went home and got started. I knew you needed 1 cup sugar, 1 cup corn syrup, 1 cup peanut butter, a bag of melted chocolate chips, and here is where it all goes wrong, 6 cups crispies. Melted the sugar and syrup (didn't' even burn it, or the chocolate chips) added the peanut butter. Time for the crispies.... Now, I like to fancy myself as one foxy gal, so I thought, "The box says 8 and I only need 6, instead of measuring of 6, I will take out 2 and pour the rest in." A brilliant plan!! In they go. "Wow, these seem to be pretty dry, I am having a hard time coating all of these, let me stir some more. Damn, it's not going so well!!"
As it turns out the 8 was not 8 cups, but 8 one and a quarter cup servings. Taadaa!! Scotcheroos with 2 extra cups of crispies. Later I will post if hubby loses job for bringing horrid dessert.

You asked for it, here it is. A long story about my fascinating day :P

That's okay, Lazy Smurf. My dad once added 1/2 cup sugar to a recipe that called for 1/2 teaspoon. And that was how we came to have dessert-style shrimp toast appetizers that Christmas. An...interesting variation, to be Minnesotan about it.
